Shrimp Tacos

Buttery shrimp, guac for days, crunchy radish, cilantro and lime and shallot yoghurt sauce - green tangy and num num nums, and cheese, cheeky cheeky cheese. Treat yourself. Por favor.

I like to prepare everything in advance of cooking the shrimp, as this only takes a few minutes and you want the shrimp to be nice and hot when you serve everything. You can of course mix up the ingredients as you see fit - buy the guac (if you really have to), sub radish for corn, or nix the cheese if you’re feeling healthy (just ignore the fact butter is involved in cooking the shrimp), etc. etc. However the green sauce is non-negotiable I’m afraid.

Serves Four

What’s in it

Green Sauce

1 cup greek yoghurt

1 cup cilantro leaves

2 limes, juiced

1 small shallot, roughly diced

½ teaspoon salt

Guac

3 avocados

5 cherry tomatoes, chopped finely

½ teaspoon chilli flakes

Crunchy Radish

3 small radish

3 tablespoons red wine vinegar

Buttery Shrimp

1 pound shrimp

1 teaspoon of paprika

1 teaspoon salt

2 tablespoons butter

Extras

1 cup shredded cheese

Handful of lettuce

1 cup leftover brown rice

Corn or Flour Tortillas

What you do with it

Start by de-shelling the shrimp, and mixing with the paprika and salt in a small bowl. Set aside. 

Make the green sauce by combining the ingredients in a food processor (a nutribullet also works), pulse until you reach your desired sauce consistency, pour into a pretty bowl and set on the table. Make the guac by mashing the avocado, and adding in the tomatoes, chilli flakes and S+P to taste. Add that to the table. Pop the radish into a small bowl, and drizzle the vinegar over the top. This can also be added straight to the table, along with any extras.

Heat a large pan to medium heat. An additional step here is to warm up your tortillas. Once you’ve done so, add them to the table stacked up under a kitchen towel. Tortillas out of the way, add the butter to the pan, and once it has melted, add in the shrimp. Fry lightly, turning frequently until the shrimp is no longer translucent. Taste test one to confirm the shrimp is cooked to your liking. Add the cooked shrimp to the table, instagram away, and get stuck in!
